In July 2026, Taco Bell restaurants in five U.S. states became connected to a large outbreak of cyclosporiasis, an intestinal illness caused by a microscopic parasite. More than 1,600 confirmed cases were associated with the outbreak, and dozens of patients were hospitalized. No deaths were reported. Investigators found that many patients had eaten at Taco Bell shortly before becoming ill. (CDC)

The investigation eventually focused on shredded iceberg lettuce. Among 190 patients whose meals were examined in detail, 90 percent reported eating iceberg lettuce. Investigators traced the lettuce served at the relevant restaurants to a single supplier, Taylor Farms de Mexico. The company recalled iceberg lettuce sourced from central Mexico, while Taco Bell stopped using lettuce from that supplier. (U.S. Food and Drug Administration)

However, the scientific evidence was not as simple as the headlines suggested. A lettuce sample initially appeared to test positive for the parasite, but the U.S. Food and Drug Administration later classified the result as a false positive. As of July 19, no product sample had produced a confirmed positive result. The connection therefore rested mainly on interviews with patients and on the process of tracing food back through the supply chain. The investigation remained open. Cyclospora is a parasite that can enter the human body through contaminated food or water. Unlike many familiar stomach illnesses, it generally does not spread directly from one person to another. After leaving an infected person’s body, the parasite must spend time in the environment before it becomes capable of infecting someone else. This is why outbreaks are usually linked to contaminated produce or water rather than ordinary contact between people.

The main symptom is frequent watery diarrhea. Patients may also experience stomach cramps, nausea, loss of appetite, weight loss, bloating, and extreme fatigue. Symptoms often begin about a week after the contaminated food is eaten, although the timing can vary. Without treatment, the illness may continue for a month or longer, and symptoms may disappear and then return. (CDC)

Cyclospora can also be difficult to diagnose. Routine stool tests do not always include a test for this particular parasite, so patients may need to ask for it specifically. Moreover, the delay between eating contaminated food and becoming ill makes it difficult for patients to remember exactly what they ate. Health officials must compare many interviews before they can identify a common ingredient.
